MYOM Irish Soda Bread

Ingredients

  1. 400 g plain white flour
  2. 300 g coarsest wholemeal flour you can find 
  3. 50 g oats keep separate to scatter on top
  4. 1 teaspoon salt
  5. 1 teaspoon baking soda or bicarbonate of soda 
  6. 500ml MYOM vegan buttermilk – see below

To make vegan buttermilk add a tablespoon of something acidic to 500ml of MYOM Original Oat Milk – I like to use apple cider vinegar, but lemon juice or white wine vinegar work brilliantly too. Don’t worry – your bread won’t taste of vinegar…but the acidic element will react with the baking soda and make the bread rise.

To make Irish Soda Bread

Mix the wet with the dry very lightly no need to knead for ages just barely pull the dough together. Split in 2 and make two loaves, pop in a tin or drop on a baking tray as a round and slash with a cross over the top and bake for 40mins at 200 degrees. Take out knock on the bottom and if hollow sounding let cool on a rack. Pop in the oven again if not hollow sounding...
